Brewed with a hefty amount of smoked malt, Smoking Wood is a delicious demonstration of what wood has to offer when it comes to beer, both in the malting process and the aging process. This imperial smoked porter is brewed with rye malt, contributing to a full body and light spiciness. Toasty oak, caramel and vanilla flavors balance the smokiness, contributing to an intense yet refined flavor profile. There are both rye barrel and bourbon barrel aged variations of this beer which are layered with a rounding richness from the spirit that once resided inside of the barrel. ABV 12.8% 8 oz pour

      The traditional seventh anniversary gift is copper, so we’ve named our 7th anniversary ale “”Cuivre”” which is “copper”” in French. Cuivre is our seventh anniversary ale, loosely brewed in the English-style old ale tradition using our house Belgian yeast strain and then blended using the solera method. A portion of each of our anniversary ales is saved in our barrels and blended in with the next year’s production, providing more complexity and depth of character that comes with age. Layered with complex flavors of dark fruit,vanilla, oak, and burnt sugar, Cuivre is a robust ale, surely the perfect beer to mark this major milestone. ABV 16.2% 8 oz pour

    • Beret

      Beret is as artistic as those who wear its namesake cap. Our brewers developed a silky, full-bodied wheat ale which we began fermenting with a Belgian-style witbier yeast strain. To finish the fermentation, we added our collection of barnyard bacteria, intended to slowly sour the ale, bringing out a slight funk and refreshing piquancy. Finally, a small dose of pureed raspberries were added for just a hint of fruity tannins, putting the berry in beret. ABV 9%

    • Tart of Darkness

      Tart of Darkness is a traditional stout that we aged in used oak barrels from The Bruery that had previously housed beers such as Cuivre™ or Black Tuesday®. We then brought them over to Bruery Terreux, added our special blend of souring bacterias and wild yeasts and watched nature take its course. The result is a perfectly tart yet awesomely dark and roasty, sour stout. Not a style you will see very often, and in our opinion, not a style seen often enough. This unique stout has notes of tart plums, roasted coffee, vanilla and oak. ABV 7.2%

    • Loakal Red

      Loakal Red is an oak aged American red ale. Our tribute to the growing Orange County beer scene. A hoppy red ale at heart, we, like many other SoCal brewers, chose the citrus and floral notes of the Centennial hop to balance the light caramel sweetness of the malt. But, of course, we couldn’t leave well enough alone. So, a portion of an older batch, left to mature in new American oak barrels, is blended with the fresh dry-hopped batch. The resulting blend has notes of toffee, orange peel, crushed herbs, vanilla & freshly sawn oak, for a beer that is intricate, yet unassuming. ABV 6.9%

      Mischief is a hoppy Belgian-style golden strong ale. This wickedly good golden ale is fiendishly dry-hopped with American hops to add a layer of complexity and mystery to its fruity, dry Belgian-style character. Citrus and resin diabolically combine with ripe melon, pear and slight peppery spice in a precariously effervescent mixture. Enjoy it, but you’ll want to keep an eye out. ABV 8.5%

    • L’Deracola

      L’deracola is a beer inspired by another favorite drink of ours that probably shouldn’t be such a favorite… cola! To create this unique beer we had to dive through the overwhelming layer of saccharine that dominates the flavor of most colas and discover the subtle flavors that create the world’s most popular soft drink. Around a dozen different spices were added to a dark malt base and it was finished off with a twist of lime for good measure. The resulting beer has all of the flavors of an ice cold cola, without the overwhelming sweetness. Delightfully refreshing on its own, but also ideal for a modern take on a classic style cocktail.ABV 7.1%
